Ingredients

French toast

  • 4 eggs
  • 1 cup milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • pinch salt
  • 8 thick slices brioche or day-old bread
  • 2 tbsp butter
  • powdered sugarto serve

Blueberry sauce

  • 2 cups blueberries
  • 3 tbsp maple syrup
  • 1 tbsp lemon juice

Instructions

  1. Simmer the blueberries, maple syrup and lemon juice in a small pan for 5 minutes, until some berries burst. Keep warm.
  2. Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a shallow dish.
  3. Melt a little butter in a large skillet over medium heat. Dip each slice of bread in the egg mixture for about 10 seconds per side.
  4. Cook 2 to 3 minutes per side until golden. Repeat with the rest, adding butter as needed.
  5. Serve dusted with powdered sugar and topped with the blueberry sauce.

Notes

Keep cooked slices warm on a rack in a 200°F (95°C) oven while you finish the batch.
