Taco Tuesday, sorted

Tuesday nights in our house mean tacos. They are quick, everyone builds their own, and there are hardly any dishes. The secret is a well-spiced filling that simmers for five minutes in a little tomato sauce, so it stays juicy instead of dry and crumbly.

Make the guacamole first so the flavours have a few minutes to come together while the beef cooks. Chunky is better than smooth here.

Ingredients

  • 1 lb ground beef
  • 1 small oniondiced
  • 2 cloves garlicminced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 cup tomato sauce
  • 8 corn tortillas
  • shredded lettucediced tomato, cheese and sour cream, to serve

Instructions

  1. Brown the beef with the onion in a skillet over medium-high heat, breaking it up, about 7 minutes. Drain excess fat.
  2. Add the garlic and spices and cook for 1 minute.
  3. Stir in the tomato sauce and simmer for 5 minutes.
  4. Warm the tortillas in a dry pan and fill with the beef and toppings.

Notes

Use certified gluten-free corn tortillas if needed.

Ingredients

  • 3 ripe avocados
  • juice of 1 lime
  • 1/2 tsp salt
  • 1/4 cup finely chopped red onion
  • 1 jalapeñoseeded and minced
  • 1 Roma tomatodiced
  • 2 tbsp chopped cilantro

Instructions

  1. Halve the avocados, remove the pits and scoop the flesh into a bowl.
  2. Mash with the lime juice and salt, leaving it a little chunky.
  3. Fold in the onion, jalapeño, tomato and cilantro. Taste and add more salt or lime.

Notes

Press plastic wrap right onto the surface to stop it browning.
