Blueberry French Toast
Custardy inside, crisp outside, with a quick warm blueberry sauce.
Ingredients
French toast
- 4 eggs
- 1 cup milk
- 1 tbsp sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- pinch salt
- 8 thick slices brioche or day-old bread
- 2 tbsp butter
- powdered sugarto serve
Blueberry sauce
- 2 cups blueberries
- 3 tbsp maple syrup
- 1 tbsp lemon juice
Instructions

Simmer the blueberries, maple syrup and lemon juice in a small pan for 5 minutes, until some berries burst. Keep warm.

Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a shallow dish.

Melt a little butter in a large skillet over medium heat. Dip each slice of bread in the egg mixture for about 10 seconds per side.

Cook 2 to 3 minutes per side until golden. Repeat with the rest, adding butter as needed.

Serve dusted with powdered sugar and topped with the blueberry sauce.
Notes
Keep cooked slices warm on a rack in a 200°F (95°C) oven while you finish the batch.
