Ingredients

  • 3 very ripe bananasmashed
  • 1/3 cup buttermelted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnutsoptional

Instructions

  1. Heat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix the bananas and melted butter, then the sugar, egg and vanilla.
  3. Sprinkle over the baking soda and salt, then stir in the flour just until combined. Fold in the walnuts.
  4. Pour into the pan and bake for 55 to 65 minutes, until a skewer comes out clean.
  5. Cool in the pan for 15 minutes, then on a rack.

Notes

Wrapped well, it keeps 3 days at room temperature or 3 months in the freezer.
