Thai Green Curry with Vegetables

A fragrant, fast coconut curry loaded with vegetables. Use store-bought paste and it’s on the table in 25 minutes.

Ingredients

  • 1 tbsp coconut oil
  • 3 tbsp green curry pastecheck it's vegan
  • 2 (13.5 oz) cans coconut milk
  • 1 red bell peppersliced
  • 1 zucchinisliced
  • 1 cup green beanstrimmed
  • 1 block firm tofu14 oz, cubed
  • 1 tbsp soy sauce or tamari
  • 1 tsp sugar
  • juice of 1 lime
  • handful Thai basil

Instructions

  1. Heat the oil in a large pan and fry the curry paste for 1 minute.
  2. Pour in the coconut milk and bring to a gentle simmer.
  3. Add the pepper, zucchini, green beans and tofu. Simmer for 8 to 10 minutes, until the vegetables are just tender.
  4. Season with soy sauce, sugar and lime juice. Stir in the basil and serve with jasmine rice.

Notes

Most green curry pastes contain shrimp; look for a vegan one if needed.
