Chicken Noodle Soup
The cozy, from-scratch classic, with tender chicken, soft vegetables and plenty of noodles.
Ingredients
- 2 tbsp butter
- 1 oniondiced
- 2 carrotssliced
- 2 celery stalkssliced
- 2 cloves garlicminced
- 8 cups chicken broth
- 1 1/2 lb boneless chicken breasts
- 1 tsp dried thyme
- 1 bay leaf
- 3 cups egg noodles
- 2 tbsp chopped parsley
- salt and pepperto taste
Instructions

Melt the butter in a large pot and cook the onion, carrots and celery for 8 minutes.

Add the garlic, broth, chicken, thyme and bay leaf. Simmer for 20 minutes, until the chicken is cooked.

Lift out the chicken, shred it with two forks and return it to the pot.

Add the noodles and cook for 6 to 8 minutes, until tender.

Stir in the parsley and season to taste.
Notes
Cook the noodles separately if you plan to keep leftovers, so they don’t soak up all the broth.
