Tuesday nights in our house mean tacos. They are quick, everyone builds their own, and there are hardly any dishes. The secret is a well-spiced filling that simmers for five minutes in a little tomato sauce, so it stays juicy instead of dry and crumbly.
Make the guacamole first so the flavours have a few minutes to come together while the beef cooks. Chunky is better than smooth here.
Beef Tacos
Juicy, well-spiced ground beef tacos with all the fixings. A family favourite for busy nights.
Ingredients
- 1 lb ground beef
- 1 small oniondiced
- 2 cloves garlicminced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 cup tomato sauce
- 8 corn tortillas
- shredded lettucediced tomato, cheese and sour cream, to serve
Instructions

Brown the beef with the onion in a skillet over medium-high heat, breaking it up, about 7 minutes. Drain excess fat.

Add the garlic and spices and cook for 1 minute.

Stir in the tomato sauce and simmer for 5 minutes.

Warm the tortillas in a dry pan and fill with the beef and toppings.
Notes
Use certified gluten-free corn tortillas if needed.
Ingredients
- 3 ripe avocados
- juice of 1 lime
- 1/2 tsp salt
- 1/4 cup finely chopped red onion
- 1 jalapeñoseeded and minced
- 1 Roma tomatodiced
- 2 tbsp chopped cilantro
Instructions

Halve the avocados, remove the pits and scoop the flesh into a bowl.

Mash with the lime juice and salt, leaving it a little chunky.

Fold in the onion, jalapeño, tomato and cilantro. Taste and add more salt or lime.
Notes
Press plastic wrap right onto the surface to stop it browning.
